Texas Caviar

Thanks for this recipe, Heather!

2 avocados, diced
1 tomato, diced
4 gr onions, chopped
cilantro, to taste
1 can of corn (drained)
1 can of black eyed peas (drained)
1 Clove of garlic or 1 tsp pre-minced garlic
1 tbs extra virgin olive oil
1 tbs lemon juice
1/2 tbs red wine vinegar
sea salt and black pepper to taste

Combine all ingredients
Let sit in fridge for about 3 hrs to let the flavors set
